And here are the “Almost-vegan, morning muffins” I don’t know why I feel the need to call them morning muffins as opposed to muffins that are meant to be consumed at other times of the day, but I like the way it sounds. 

They are cranberry almond muffins and I based my recipe off of this one. The boy picked the cranberries at the end of Fall, (cranberries last so long) and I’ve been craving having muffins for breakfast lately, so I thought I’d make a sort-of healthy muffin. The muffins were enjoyed for breakfast all last week. I am calling them “almost-vegan” because they could easily be vegan if you substituted applesauce for the eggs, but instead I used applesauce because I didn’t feel like using oil. The texture wasn’t exactly like most muffins, it was more dense, and I think it’s a result of the flours I used as well as other arbitrary substitutes for experimentation (i.e. all applesauce instead of oil). No actual complaints… just an observation.
