coracakes caters again! (it’s still the week of Christmas, so this is still relevant)
A good friend of mine asked me to make cupcakes for her her work’s holiday party and I was more that excited to do it! The party was ski lodge themed, so I was inspired by winter/Christmas flavors and hot chocolate. I made (as seen bottom right) peppermint chocolate cupcakes topped with vanilla buttercream frosting. I added candy cane bits as well as a little peppermint extract inside the chocolate sour cream cake. For the frosting, I used a recipe from Joy the Baker. Now, I thought I didn’t like non-cream cheese frosting, but let me tell you… I’ve had a change of heart. Thanks Joy. IT’S REALLY GOOD. And I’m not going to pretend to be modest, but these cupcakes were really good. Gwen told me there was one lady licking the wrapper. I accept that as a high compliment.

I used a sugar cookie dough recipe from Martha Stewart Living (a first for me). I made royal icing that was part of the same recipe and had a lot of fun decorating the cookies. I’m lucky that my roommate got that amazing box of cookie cutters from a Yankee Swap the year before. I ended up making a huge batch of the dough and put half in the fridge. The first bunch I made I put in little baggies and gave to teachers at work before winter break. I then rolled the rest of the dough out a couple of days later to bring home.

I’m sitting at the airport right now, on my way to Los Angeles because I’m on vacation for another week! I will have delayed Christmas baking posts to come.

Christmas apron!
Occasionally when I visit my parents house (the house I grew up in) there are silly gifts waiting for me at the foot of my bed. Sometimes they’re things I left behind the last time I was there, and sometimes they’re lovely presents from my mamma. When I was home a couple of weeks ago I received this festive apron and am so happy to be doing my holiday baking wearing it!
My apron count is getting close to double digits…

I’m personally not a huge fan of gingerbread cookies, but I’ve got to get rid of them somehow.
