Work right now is endlesslessly tiring. Even after only a 4 day week, I am pooped. And the next couple ok weekends are really full, and we’re not fully unpacked so my head is in a constant state of clutter. But after leaving school today, I went to get myself a free donut. And it tasted so good, because it tasted like a break.
My favorite donut is the one pictured, my second favorite is a Boston Cream. I don’t eat them often, but when I do… it’s always worth it.

I used a sugar cookie dough recipe from Martha Stewart Living (a first for me). I made royal icing that was part of the same recipe and had a lot of fun decorating the cookies. I’m lucky that my roommate got that amazing box of cookie cutters from a Yankee Swap the year before. I ended up making a huge batch of the dough and put half in the fridge. The first bunch I made I put in little baggies and gave to teachers at work before winter break. I then rolled the rest of the dough out a couple of days later to bring home.

I’m still on vacation. I’ve now made my way to Austin, TX and will write more about my adventures when I get back in the Bean. (I haven’t baked any since my last posts earlier this week but I’ve eaten lots of yummy and sweet things and taken a couple of pictures along the way.)
This weekend my wonderful niece Lena came and stayed with me in Boston. On her other visits we’ve baked together and it’s been really fun, so among the things I had planned, I promised we would bake again.
It was hard to decide what to do but we settled on Homemade Funfetti Cupcakes to celebrate spring (while it’s been cold this weekend, it’s sure starting to look like spring, and I am very hopeful about warmer weather soon).

She’s 5’1” now, and in middle school, soon enough she’ll be taller than me. In all seriousness, she’s the coolest 12 year old I know.
Funfetti cake out of the box used to me my go-to thing to bake, especially when I was in college. To make our cupcakes we followed a vanilla cupcake recipe I have and just added spring sprinkles in the batter.

The batter was looking great and tasted just right… now the frosting, that was a whole other (sad) story.
